Each Week Chef Gabe features a new dish! Here's what's up for March:
March 2 — Saffron Linguine
We sauté garlic and Spanish sausage with olive oil, grape tomatoes and a dash of crushed-red peppers, the mixture is deglazed with white wine, tossed with saffron broth and linguine then finished with butter and fresh herbs. The linguine is garnished with grilled calamari steak and Castelvetrano olives.
March 9 — Grilled True Cod
True Cod is grilled and basted with garlic, crushed red pepper and infused olive oil. Served atop whipped potatoes laced with chipotle peppers in Adobo and cream cheese. The fish is crowned with tomatillo-pico.
March 16 — Bourbon Peach Cheesecake
Vanilla cheesecake batter with bourbon-roasted peaches in the center — baked on top of a graham cracker crust with peach-sour cream topping. The cheesecake is presented with a peach and bourbon cream sauce and garnished with a brandy snap cookie.
March 23 — Mediterranean Style Pasta Salad
Lumachine Rigate pasta mixed with Castelvetrano olives, Kalamata olives, roasted grape tomatoes, barrel cured feta, Italian dressing, fresh oregano, dill, scallions and Italian parsley.
March 30 — Chocolate Cherry Cheesecake
Chocolate cookie crust, rich New York style cheesecake with Callebaut chocolate and dried tart cherries. Topped with whipped cream, draped with brandy-cherry glaze, presented over warm chocolate ganache with swirls of brandy cream, garnished with sugar pinnacle.
