With Foraged Mushrooms, Roasted Shallot, Harissa Breadcrumbs

Get out of the cold and enjoy this magnificent blend of tender rock shrimp and earthy foraged mushrooms sautéed with sweet roasted shallot and perfectly cooked linguine pasta. We finish it with spicy harissa-scented breadcrumbs, the southern Italian way. Have you heard of harissa? It's a Tunisian and Libyan hot chili sauce (it adds a subtle heat to this dish) whose main ingredients are piri piri (a chili pepper), serrano peppers and other hot chili peppers and spices and herbs such as garlic paste, coriander, red chili powder, caraway and olive oil. This popular spice adds a chili flake element to our Rock Shrimp Linguine. We cook the harissa lightly with breadcrumbs and finish it with a touch of ground Parmesan. It's a perfect touch to our Rock Shrimp Linguine, only available from Jan. 31 to Feb. 27.

Tim's Tasting Notes: From one of the warmest and driest areas in Washington State, this is a big bold chardonnay, brimming with lush tropical fruits like pineapple and mango accented with baking spices. Rich and powerful this wine was made to be served with the mild flavors of foraged mushrooms and sautéed Rock shrimp accented with a subtle heat of the harissa breadcrumbs. The evident oak spices of cinnamon and vanilla make a great match for this rich flavorful entrée.
