Dungeness Crab Salad

avocado, cara cara orange, piquillo pepper, green goddess vinaigrette, living watercress

Our chefs continue sharing their love for crustaceans in this tasty Dungeness Crab Salad. After finely dicing piquillo and chunks of avocado, our chefs fold it all together with crab meat and a touch of aioli. Then it is placed in a ring mold which is the topped with supreme cuts of orange and then finished off with living watercress that has been tosse in olive oil, sherry vinegar, salt and fresh cracked pepper. Crab Gyoza

deep sea red and dungeness, preserved lemon caper aioli, red onion dill marmalade

For the sake of keeping things simple, try the Crab Gyoza. This wrapper is filled with a mixture of crab, softened cream cheese, green onion, Worcestershire, parsley, thyme, lemon juice, zest and pepper. Quite the complement to this delicate meat. Dungeness Crab Tagliatelle

brown butter, oregano, mama lil's, preserved lemon, roasted garlic, hazelnut breadcrumbs

Our Chefs present this pasta dish to you with bold flavors without overwhelming the sweet and delicate flavor of the crab. After melting butter over medium heat in a saute pan until it becomes a nutty brown color, oregano leaves, minced preserved lemon, chopped mama lil's peppers and chopped roasted garlic are added. Once everything begins to sizzle, we throw in the crab, pasta, a light splash of white wine, heavy cream, and a bit of water. This is not crab alfredo; what we are looking for is for the pasta to be lightly coated in a sauce that marries the dish together to highlight the flavors.
