Herb-Cheddar Scone

This is a cream scone (not butter) and the extra fat in the heavy cream takes place of the butter. This produces a light fluffy scone — as made by our Alki Pastry Chef Jane Gibson.

Herb-Cheddar Scone

Serves 4


2 cups flour
1/4 teaspoon salt
1/2 cup sugar
1 tablespoon baking powder
1 and 1/2 tablespoons mixed herb seasoning
6 ounces cheddar cheese, grated
1 and 1/4 cup heavy cream

  1. Combine all of the dry ingredients.
  2. Stir in the cheddar cheese.
  3. Add the heavy cream.
  4. Mix until combined.
  5. Scoop or roll out.
  6. Bake at 350 degrees for 15 to 20 minutes, until golden brown.
  7. Makes 2 dozen mini-scones or 1 dozen large scones.
