Clams are bivalve mollusks with two shells, or valves. There are two main varieties of clams, hard-shell, Mercenaria mercenaria and soft-shell, Mya arenaria. Hard-shell clams generally live in deeper waters, whereas the soft-shell resides in tide flats. Soft-shells are generally not eaten raw. The siphon neck protrudes from the soft-shells, so they cannot completely close their shell. Clams are named based on their size, region, and sometimes personal decision of a merchant.
