Here's a way to take a trip to New Orleans without the price of airfare or a hotel. Our New Orleans-style Snow Crab Boil is chock full of little goodies that you get to fish your way through (no pun intended). Sweet and succulent snow crab, andouille sausage, manila clams, pearl onions, red potatoes, red bell peppers are boiled in an aromatic broth of water, Old Bay Seasoning, cayenne pepper, lemon and bay leaf. The dish is cooked until the clams open up to say hi! We finish it with a spicy and fragrant butter. Pop this crab open with a great bottle of Chardonnay, the perfect wine pairing.

New Orleans-Style Crab Boil

Serves 3-4


2 gallons water
1/4 cup Old Bay Seasoning
3 tablespoons cayenne pepper
2 lemons, halved
4 bay leaves
3 pounds snow crab
1 1/2 pounds manila clams
1/2 pound andouille sausage, sliced
1 red bell pepper, sliced
1/2 cup pearl onions
1 pound red potatoes, halved
1 cup creole butter (recipe follows)

  1. Bring water to a boil with Old Bay Seasoning, cayenne pepper, lemons and bay leaves.
  2. Add seafood, sausage, pepper, onions and potatoes to broth and bring back up to a boil.
  3. Pull all seafood and veggies out of liquid and place on large platter.
  4. Top with butter and dig in!

Creole-Spiced Butter

Ingredients for Creole-Spiced Butter

3/4 pound butter, unsalted softened
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
pinch dried oregano
pinch dried basil
pinch dried thyme
1/2 teaspoon black pepper
pinch white pepper
pinch cayenne pepper
1/2 teaspoon paprika
1/2 teaspoon chili powder
1/2 tablespoon salt

Directions for Creole-Spiced Butter
  1. Mix all ingredients together with a whisk.
  2. Keep at room temperature until serving.
