Here is my fan-freakin'-tastic fritter recipe. These are also called Beignets (pronounced ben-yeh). I love it and I want you to try it. I have also included my Remoulade sauce, which takes mayonnaise to a whole new level.

Dungeness Crab Fritters with Roasted Pepper Remoulade

Serves 4

Crab Fritters Ingredients

1 cup Wondra flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon Kosher salt
1/2 teaspoon chopped fresh thyme
1/4 teaspoon dry English mustard
1 egg
1/2 cup half and half or milk
1 cup or 8 ounce of crab meat
Frying oil

Crab Fritters Directions
  1. Mix all the dry ingredients thoroughly.
  2. Mix all the wet ingredients thoroughly.
  3. Combine the ingredients and spoon dollops into a 350 degree Fahrenheit fryer.
  4. Chef's Tip: Poke the fritters with a toothpick to see if they are done. If it comes out clean, then they are.
Red Pepper Remoulade Ingredients

1 cup mayonnaise
1 tablespoonchopped shallots
1 teaspoon minced garlic
1 tablespoon capers, chopped
1 tablespoon chopped roasted red pepper
1 tablespoon Dijon mustard
1 tablespoon chopped parsley
1/2 tablespoon chopped dill
1/2 lemon, juiced
1 pinch salt to taste

Red Pepper Remoulade Directions
  1. Mix all ingredients together.
