With summer in full swing, here's a Dessert to cool you down. Smothered with local berries, a light and fluffy biscuit is finished with tangy whipped mascarpone and lavender-scented honey.

Blackberry Shortcake Topper

Makes 3 cups


2 pints local blackberries
1cup water
1tablespoon ginger, minced
1 lemon, zest
1/2 stick cinnamon
pinch salt
1/2 cup sugar

  1. Wash berries and place in a clean bowl.
  2. Place water, ginger, lemon zest, cinnamon and salt in a small saucepan.
  3. Bring to a boil.
  4. Add sugar and bring to a simmer.
  5. Remove from heat and let stand for 4 minutes.
  6. Strain liquid over berries. Toss with spoon and refrigerate.

Chef's Tip: This is great on pancakes, waffles, ice cream or any other sweet treat.
