Here's a perfect sauce to use over ice cream. When you serve dishes like warm apple tart or pie, pair it beautifully with a big scoop of vanilla ice cream drizzled with this sea salt caramel sauce. You can store this in your refrigerator up to a month. Pair it with sips of Riesling.

Sea Salt Caramel Sauce

Makes 2.5 cups


2 cups granulated sugar
12 tablespoons unsalted butter, at room temperature, cut into pieces
1 cup heavy cream, at room temperature
1 tablespoon fleur de sel (or any other flaky sea salt)

  1. Add sugar to a heavy bottom pot and cook at medium heat until the sugar melts and reaches 350 degrees F.
  2. Add butter and cook until completely melted.
  3. Add the cream and whisk until the sauce is completely cooked through.
  4. Pull caramel off burner and add sea salt. Cool to room temperature and then store in refrigerator. Warm before serving.
