The foam is a maceration of strawberries cooked and reduced into a syrup. The syrup is poured into a bowl of bloomed gelatin set over an ice bath and whisked to incorporate air. As the air is whipped and the gelatin sets up and starts to hold and bind the syrup and air, a flavorful foam is created.

Strawberry Foam

(makes 2 cups)

Ingredients

4 sheets of gelatin
2 cups strawberry syrup
.5 teaspoon salt

Directions
  1. Bloom gelatin
  2. Dissolve gelatin into the strawberry syrup
  3. Place the mixture in a large bowl over ice
  4. With all your might whisk as if your life depends on it and don't stop till it's a foam and holds it's self on the whisk.
  5. Place into a container label and date and hold in the cooler up to two days.
