HERB BUTTER-BASTED HALIBUT CHEEKS WITH TOMATO COULIS

Serves 4

1 1/2 pounds Halibut Cheeks
4 tablespoons Olive Oil
Salt and Pepper for Seasoning
Herb Butter - see recipe below
Tomato Coulis - see recipe below
Basil Garnish

Preheat oven to 350 degrees

  1. In a Sauté Pan Heat the olive oil over medium heat for 3-5 minutes.
  2. Season the Halibut Cheeks with Salt and Pepper.
  3. Pan sear the Halibut Cheeks until golden brown on both sides.
  4. Top the halibut cheeks with the herb butter and place in oven for 5 minutes.
  5. Remove Halibut and place on a plate. Top with tomato coulis and garnish with basil.

Tomato Coulis

4 each Roma tomatoes
2 tablespoons olive oil
1/4 teaspoon kosher salt
1/2 teaspoon minced shallot
1/2 teaspoon minced garlic
1/4 teaspoon chopped fresh thyme
1/4 cup olive oil
Salt and pepper to taste

  1. Cut the Roma tomatoes in half and place in a small heat-proof bowl. Toss with 2 tablespoons of olive oil and 1/4 teaspoon kosher salt.
  2. Place in oven and cook for 15 minutes or until soft. Remove from oven and chill.
  3. Blend the tomatoes, shallot, garlic, and thyme in a blender.
  4. Drizzle in 1/4 cup olive oil while blender is on.
  5. Season with salt and chill.

Herb Butter

1/4 pound unsalted butter
1 teaspoon chopped parsley
1/2 teaspoon chopped thyme
1/2 teaspoon chopped tarragon
1 teaspoon minced garlic
1/4 teaspoon salt

  1. Let butter soften at room temperature.
  2. Mix ingredients and chill.
