SHRIMP SCAMPI

Serves 4

2 lbs. Large prawns, peeled and deveined
1 oz. Canola oil
4 oz. White wine
4 ea. Roma tomatoes
½ cup Fresh parsley
½ oz. Fresh lemon juice
5 oz. Whole Butter, unsalted
2 tsp. Salty’s seasoning

Method:

  1. Heat oil in sauté pan until the oil shimmers.
  2. Season prawns and sauté for 4 minutes and then remove from pan
  3. Deglaze with wine and add tomatoes, parsley, lemon juice and butter.
  4. Simmer over low heat until butter melts.
  5. Add prawns back into butter sauce.
