Broiled Monkfish with Sage

Serves 4

Ingredients

4 each 6 ounce Monkfish filet
2 fluid ounces canola oil
1 tablespoon Salty's Seasoning Salt
4 ounces sliced pancetta
1/2 cup sage leaves, whole, fresh

Directions
  1. Season Monkfish filets with seasoning blend.
  2. Place sage leaves on top of fish and wrap with pancetta.
  3. Place in sauté pan with oil and broil in oven on high heat for 12 minutes.
  4. Rotate the wrapped fish every 3 minutes so that the pancetta doesn't burn.
