Broiled Monkfish with Sage
4 each 6 ounce Monkfish filet
2 fluid ounces canola oil
1 tablespoon Salty's Seasoning Salt
4 ounces sliced pancetta
1/2 cup sage leaves, whole, fresh
- Season Monkfish filets with seasoning blend.
- Place sage leaves on top of fish and wrap with pancetta.
- Place in sautÃ© pan with oil and broil in oven on high heat for 12 minutes.
- Rotate the wrapped fish every 3 minutes so that the pancetta doesn't burn.
