I want to share with you my favorite Christmas recipe that I cook every year. This simple and amazing dish is Italian pasta with anchovies. It is funny to me that most people do not like anchovies but they love Caesar salad. For those of you who do not know, Caesar salad dressing has a ton of anchovies in it. Try this and I promise you will love it!

Anchovy Spaghetti Recipe

Serves 4

Ingredients

1 pound spaghetti
1 tablespoon olive oil
10 each anchovies, chopped
8 sprigs Italian parsley, chopped
1/2 cup white wine
1/4 cup parmesan cheese, ground or shredded
2 tablespoons olive oil
salt to taste

Directions
  1. Fill a 2-gallon pot with cold water and 1 teaspoon kosher salt.
  2. Turn on high to get water boiling.
  3. Heat a large fry pan to medium heat.
  4. Add olive oil and anchovies and cook for 3 minutes.
  5. Add Italian parsley and white wine and cook for 3 minutes or until wine slightly reduces.
  6. Pull pan off heat and let sit.
  7. Place pasta in boiling water and cook until al dente (roughly 8 minutes)
  8. Pull pasta directly out of water and add to large fry pan.
  9. Place fry pan back on burner and turn to medium heat.
  10. Stir pasta until all flavors are incorporated.
  11. Toss with half the Parmesan cheese and olive oil.
  12. Taste for salt.
  13. Place in serving container and finish with remaining Parmesan cheese.

Tip: If you want to spice this dish up, add 1/2 teaspoon of chili flakes!
