Seared Alaskan Halibut with Roasted
Portobello Mushrooms and Truffle Vinaigrette

Serves 2

Ingredients

2 6-ounce. Alaskan halibut fillets
1/4 cup canola oil
1 pinch salt and pepper, to taste
2 roasted portobello mushrooms (recipe follows)
2 tablespoon truffle vinaigrette (recipe follows)

Directions
  1. Heat canola oil in a large fry pan over medium heat.
  2. Season halibut on both sides.
  3. Sear in frying pan for 5 minutes on both sides.
  4. To serve, place halibut on a plate and top with the sliced mushrooms.
  5. Drizzle with truffle vinaigrette.
Roasted Portobello Mushrooms Ingredients

2 each portobello mushrooms
2 tablespoon olive oil
1 pinch salt and pepper, to taste

Directions
  1. Preheat oven to 350°Fahrenheit
  2. Remove stems from Portobello mushrooms.
  3. With a spoon clean the black off the undercarriage of the mushroom.
  4. Rub mushrooms with olive oil and season with salt and pepper.
  5. Roast whole mushrooms for 10–12 minutes or until soft to the touch.
  6. Slice thinly. Set aside.
Truffle Vinaigrette Ingredients
  1. 1 tablespoon champagne vinegar
  2. 1/4 teaspoon garlic, minced
  3. 1/2 teaspoon shallot, minced
  4. 1/2 teaspoon fresh thyme, chopped
  5. 1/2 teaspoon Dijon Mustard
  6. 1 tablespoon truffle oil
  7. 2 tablespoons canola oil
  8. 1 pinch salt and pepper
Truffle Vinaigrette Directions
  1. Add the champagne vinegar, shallot, garlic, thyme and Dijon mustard to a blender.
  2. Blend for 20 seconds.
  3. Start drizzling in both oils slowly while the blender is running.
  4. Finish with salt to taste.
  5. Blend until smooth. Set aside.
