Dungeness crab is tossed with diced Granny Smith apples in a creamy mixture of mayonnaise and sour cream, spiced with cayenne pepper (make it as hot as you want). This is great served on crackers, salads, lettuce cups, bread or eat it by the spoonful! Serve this salad on delicate bibb lettuce which will contrast nicely with the sweet Dungeness crab and tart-sweet Granny Smith apples. Salty's sommelier suggests you pair this with Riesling.

Dungeness Crab and Granny Smith Apple Salad

Serves 3-4


1 each 2-pound Dungeness crab, cooked and chilled
1/3 cup mayonnaise
3 tablespoons sour cream
1/2 lemon, juiced
1/4 teaspoon cayenne pepper (use 1/8 teaspoon for less heat)
pinch white pepper
1/2 Granny Smith apple, chopped fine
5 sprigs mint, chopped fine
salt to taste

  1. Pick all the Dungeness crab out of the shell.
  2. Mix the mayonnaise with the sour cream, lemon juice, cayenne pepper, white pepper, apple and mint.
  3. Gently fold in the crab and then finish with salt to taste.
