Corporate Chef Jeremy McLachlin simply and creative salad dressing made with locally sourced raspberries.

Raspberry Vinaigrette

Serves 4


1 pint raspberries
1/2 cup champagne
1 cup canola oil
1/2 teaspoon olive oil
1/2 bunch fresh mint
1 tablespoon honey

  1. Add all ingredients, except oil to a blender or food processor and puree until smooth.
  2. Slowly add oil until well combined.
