Dungeness Crab and Apple Salad

Dungeness crab meat is presented in a salad tossed with lemon, mayo, sour cream, chopped Granny Smith apples, mint, cayenne pepper and salt; served with butter lettuce as a garnish.

Dungeness Crab and Apple Salad

Serves 4


1 each 2-pound Dungeness crab, cooked and chilled
1/3 cup mayonnaise
3 tablespoons sour cream
1/2 lemon, juiced
1/4 teaspoon cayenne pepper (or less heat, cut cayenne to 1/8 teaspoon)
pinch white pepper
1/2 Granny Smith apple, chopped fine
5 sprigs mint, chopped fine
salt to taste

  1. Pick all the Dungeness crab out of the shell.
  2. Mix the mayonnaise with the sour cream, lemon juice, cayenne pepper, white pepper, apple and mint.
  3. Gently fold in the crab and then finish with salt to taste.

Note: Great served on crackers, salads, lettuce cups, bread or a spoon.
