Dungeness Crab and Apple Salad
1 each 2-pound Dungeness crab, cooked and chilled
1/3 cup mayonnaise
3 tablespoons sour cream
1/2 lemon, juiced
1/4 teaspoon cayenne pepper (or less heat, cut cayenne to 1/8 teaspoon)
pinch white pepper
1/2 Granny Smith apple, chopped fine
5 sprigs mint, chopped fine
salt to taste
- Pick all the Dungeness crab out of the shell.
- Mix the mayonnaise with the sour cream, lemon juice, cayenne pepper, white pepper, apple and mint.
- Gently fold in the crab and then finish with salt to taste.
Note: Great served on crackers, salads, lettuce cups, bread or a spoon.
