I have never met a chef who doesn’t love fava beans. Cooks hate them because you have to husk the beans and peal off the outer shell. It's worth the time! With a vibrant green color, this butter is made with steamed and cleaned fava beans pureed with parsley, butter, salt, lemon juice and white pepper. The fresh beans have a hearty flavor, a tone of rich butter with a bitter finish.

Fava Butter

Makes 1/2 cup


1/2 cup fava beans, cleaned and steamed
1/2 lemon, juice
pinch of sea salt
1 stick unsalted butter, room temperature
6 parsley leaves
pinch white pepper

  1. Clean the fava beans and steam them until tender.
  2. Chill the steamed beans.
  3. Once chilled, place in a blender and add lemon juice.
  4. Add sea salt, butter and parsley.
  5. Puree until butter is well blended.
  6. Finish with white pepper and salt to taste.
  7. Chill until you use it.

Chef's Tip: This is a great butter to spread on bread!
