Peach Glaze

Our glaze is a reduction of ginger, chili flakes, orange juice, lemon juice, peaches, rice wine vinegar, aji mirin (sweet rice wine) and a touch of soy sauce. Cooked until thick, it is pureed with fresh cilantro and seasoning is adjusted with salt.

Peach Glaze

Makes 1/2 cup


1 tablespoon ginger, minced
pinch chili flakes
1/2 cup orange juice
1/2 lemon, juiced
1 peach, pitted and chopped
1 tablespoon rice wine vinegar
1 tablespoon aji mirin (Japanese cooking wine)
dash soy sauce
4 cilantro leaves, chopped

  1. Place ginger, chili flake, orange juice, peach, rice wine vinegar and aji mirin in a small sauce pan.
  2. Cook to medium heat for 15 minutes or until thick and peach has broken down.
  3. Place in blender and puree.
  4. Season with soy sauce and chopped cilantro

Chef's Tips: This peach glaze is wonderful served on chicken, fish or rice.
