Green Goddess Aioli

Green goddess aioli is a dressing that is vibrant green and packed with an herbaceous punch. We start the aioli with pasteurized egg yolks, garlic, chervil, chives, tarragon, anchovies, lemon juice, and salt. This is blended together and then we finish by emulsifying the aioli with olive oil, canola oil and seasoned with lemon juice and salt.

Green Goddess Aioli

Makes 1/2 cup


2 egg yolks
1 small clove of garlic, minced
1 sprig tarragon
4 leaves chervil
3 sprigs chive
1 anchovy
1/3 cup olive oil
1/4 lemon, juiced
salt to taste

  1. Place the egg yolk, garlic, tarragon, chervil and chive in a blender. Blend for 1 minute.
  2. While blender is running drizzle olive oil slowly.
  3. Season with 1/4 lemon juiced and salt to taste.
