Satsuma Lemongrass Ice
Makes 2 cups
12 each Satsuma oranges, juiced
1/2 each star anise
2 tablespoons lemongrass, chopped
1 teaspoon ginger, minced
1 tablespoon rice wine vinegar, unseasoned
pinch kosher salt
1 tablespoon sugar
- Place all ingredients in a sauce pan and cook on medium heat for 10 minutes.
- Strain into a shallow pan and place in freezer.
- Scrape with fork to create ice and then place on oysters before serving.
