Satsuma Lemongrass Ice

This is a granita-style ice made by cooking Satsuma orange juice with lemongrass, ginger, star anise, rice wine vinegar, salt and sugar. The mixture is strained into a pan, chilled and then scraped with a fork to make the ice. Serve it on top of oysters and pair it with Sauvignon Blanc!

Satsuma Lemongrass Ice

Makes 2 cups


12 each Satsuma oranges, juiced
1/2 each star anise
2 tablespoons lemongrass, chopped
1 teaspoon ginger, minced
1 tablespoon rice wine vinegar, unseasoned
pinch kosher salt
1 tablespoon sugar

  1. Place all ingredients in a sauce pan and cook on medium heat for 10 minutes.
  2. Strain into a shallow pan and place in freezer.
  3. Scrape with fork to create ice and then place on oysters before serving.
