This aioli has a sweet peppery flavor with a nice smoky taste. The aioli is started with piquillo peppers, garlic, smoked paprika and egg yolk. We emulsify the aioli with canola oil and finish with sherry vinegar and salt to taste. Use this condiment with shellfish or on your favorite cracker.

Piquillo Pepper Aioli

Makes 1/2 Cup


3 piquillo peppers
1 egg yolk
1 teaspoon smoked paprika
1 clove garlic, minced
1/3 cup canola oil
1 teaspoon sherry vinegar
salt to taste

  1. Place the pepper, egg yolk, smoked paprika and garlic in a blender.
  2. Blend for 1 minute on high.
  3. Drizzle in oil while blender is running.
  4. Season with sherry vinegar and salt to taste.
