Juniper Vinaigrette

This is simple lemon vinaigrette spiked with the aromatic juniper berry. The vinaigrette is made with lemon juice, honey, canola oil, juniper berries and salt.

Juniper Vinaigrette

Makes 1 cup

Ingredients

4 lemons, juiced
1 tablespoon honey
1 each dried juniper berry, crushed
3/4 cup canola oil
salt to taste

This is a blender-style vinaigrette that can be used in many applications from glazes on fish or chicken to simply tossed with greens or fresh vegetables.

Directions
  1. Place the lemon juice, honey and juniper berries in a blender.
  2. Blend for 2 minutes.
  3. Drizzle in canola oil slowly while blender is running on high.
  4. Finish with salt to taste.
