Makes 1 cup
4 lemons, juiced
1 tablespoon honey
1 each dried juniper berry, crushed
3/4 cup canola oil
salt to taste
This is a blender-style vinaigrette that can be used in many applications from glazes on fish or chicken to simply tossed with greens or fresh vegetables.
- Place the lemon juice, honey and juniper berries in a blender.
- Blend for 2 minutes.
- Drizzle in canola oil slowly while blender is running on high.
- Finish with salt to taste.
