Sliced thick, shallots are pickled in a mixture of red wine, red wine vinegar, sugar, salt, celery seed and mustard seed. Reduced to make a syrup, the onions turn vibrant red.

Pickled Red Onions

Makes 1 cup

Ingredients

6 large shallots, sliced thick
1 cup red wine
1/2 cup red wine vinegar
1/2 cup sugar
pinch celery seed
pinch mustard seed
pinch salt

Directions
  1. Cut onions width wise and place in a small saucepan.
  2. Add remaining ingredients and cook until sauce becomes the consistency of a syrup.

Chef's Tips: Great on salads, sandwiches or relish trays.
