Creamed Mustard Greens with Bacon

After sautéing onions with bacon, adding garlic and toasting, we add the mustard greens, deglaze with white wine and then add heavy whipping cream and fennel seed. The greens are cooked and finished with butter, Parmesan cheese and salt. The Washington halibut rests on top of the creamed greens and we spritz it with a little olive oil to give the fish a nice shine.

Creamed Mustard Greens with Bacon

Serves 3-4


1/2 pound bacon, chopped
1/2 sweet onion, chopped
2 cloves garlic, minced
2 bunches mustard greens, cleaned, stemmed and chopped
1/2 cup white wine
1 cup heavy cream
1/4 cup parmesan cheese, shredded
salt to taste

  1. Place bacon in large fry pan and turn heat to medium.
  2. Crisp bacon and add onion.
  3. Cook until translucent.
  4. Add garlic and cook for 1 minute.
  5. Add greens and white wine and cook until alcohol odor has cooked off.
  6. Add cream and cook until thick.
  7. Finish with Parmesan cheese and salt to taste.
