Heirloom green tomatoes (or zebras) are the most flavorful green tomatoes. The tomatoes are naturally green (not because they were picked too early). We roast the tomatoes lightly and then mix them with roasted sweet onions, roasted jalapeno, cilantro, lime juice, salt and cracked black pepper.

Green Heirloom Tomato Salsa

Makes 2 Cups


1 pound green heirloom tomatoes, sliced
1/2 sweet onion, sliced
1 jalapeño, halved
1 tablespoon olive oil
2 limes, juiced
1 teaspoon salt
8 leaves cilantro, chopped

  1. Preheat oven to 450 degrees F.
  2. Toss heirloom tomato, onion and jalapeño pepper in olive oil and place on sheet pan.
  3. Roast in oven for 8 minutes.
  4. Cool veggies then chop and mix in bowl.
  5. Finish with lime juice, salt and cilantro.
