Black plums are tossed in a mixture of sugar, ginger, cilantro stems, lemon juice and salt and then placed in airtight jars and refrigerated. The flavors are salty, sweet and fruity, a great accompaniment to wild salmon barbecues and rice.

Preserved Black Plums

Makes 1 Quart


8 plums, halved
1 tablespoon fresh ginger, peeled and minced
1 tablespoon cilantro stems, minced
2 tablespoons sugar
1 teaspoon kosher salt
2 lemons, juiced

  1. Place all ingredients in a large bowl and toss.
  2. Put in a clean quart mason jar and put a lid on it.
  3. Place in your refrigerator for at least 2 days before using and it will last up to 10 days.
  4. Remove plums from jar and rough chop. Return plums to mason jar and refrigerate. When ready to serve spoon plum preserves over salmon.
