Preserved Black Plums
Makes 1 Quart
8 plums, halved 1 tablespoon fresh ginger, peeled and minced 1 tablespoon cilantro stems, minced 2 tablespoons sugar 1 teaspoon kosher salt 2 lemons, juiced
- Place all ingredients in a large bowl and toss.
- Put in a clean quart mason jar and put a lid on it.
- Place in your refrigerator for at least 2 days before using and it will last up to 10 days.
- Remove plums from jar and rough chop. Return plums to mason jar and refrigerate. When ready to serve spoon plum preserves over salmon.
