This perfect pairing for halibut, starts simply grill the fish to highlight the flaky texture and clean taste and then place it over a nice light lemon yogurt finished with pan-roasted potatoes and local cucumber and radish salad. This lemon yogurt is great on fish, chicken, flat breads, salads, breakfast, fruit and smoothies.

Salty's Lemon Yogurt

Serves 4

Ingredients

8-ounce container Greek yogurt
2 lemons, zested
1 lemons, juiced
1 pinch white pepper
1 pinch salt, to taste

Directions
  1. Place the yogurt in a fine mesh strainer with a bowl to catch excess water
  2. Drain for 2 hours so the yogurt gets extra thick.
  3. Zest the lemons with a micro plane. If you are using a regular zester make sure to chop it fine before adding.
  4. Juice one of the lemons.
  5. Add a pinch of white pepper and salt to taste.

TIP: Add diced cucumbers and ground coriander to make tzatziki.
