Sweet Corn Pico De Gallo


Serves 4


3 ears of corn, shucked
1 each jalapeño pepper, seeded and minced
1/2 each red onion, diced
1 bunch cilantro, chopped
2 limes, juiced
1 pinch salt to taste

Great served on tacos, grilled chicken, fish or with tortilla chips.

  1. Get your grill heated up and lightly oil the corn cobs.
  2. Grill the corn until the kernels start to color or darken.
  3. Cool down the corn in the refrigerator and then slice it off the cob.
  4. Place all ingredients in a large bowl and mix.
