Sweet Corn Pico De Gallo.
3 ears of corn, shucked
1 each jalapeÃ±o pepper, seeded and minced
1/2 each red onion, diced
1 bunch cilantro, chopped
2 limes, juiced
1 pinch salt to taste
Great served on tacos, grilled chicken, fish or with tortilla chips.
- Get your grill heated up and lightly oil the corn cobs.
- Grill the corn until the kernels start to color or darken.
- Cool down the corn in the refrigerator and then slice it off the cob.
- Place all ingredients in a large bowl and mix.
