Corporate Chef Jeremy McLachlin has this created this fruit and vegetable salsa for a festive twist! Serve over chicken, fish, or pork, or as a side dish

Pineapple Salsa

Serves 4


2 pineapple (grilled and cubed)
2 fluid ounces lime juice
2 red onion brunoise
2 part cilantro
2 jalapeños brunoise
1 fluid ounce apple cider vinegar
2 red bell peppers brunoise
1 fluid ounce canola oil
4 fluid ounces pineapple juice

  1. In a large bowl, toss together pineapple, red bell pepper, green bell pepper, corn, black beans, onions, green chile peppers, orange juice, and cilantro.
  2. Season with cumin, salt, and pepper.
  3. Cover, and chill in the refrigerator until serving.
