You may enjoy sweet or hot peppers but to make them truly ZING, pickle them. Below I will show you a quick easy pickle recipe for sweet and hot peppers. This is a great way for you to add some love to your pantry.

Vinegar is commonly used in food preparations, often without you even knowing it’s in there. I love using vinegar in many different ways, from pickling to finishing a dish. The acidity or tartness of the vinegar can vary based on type. For example rice wine vinegar is pretty subtle where champagne vinegar is more pungent.

Sweet Pickled Peppers

Makes 1qt

BRINE

1 cup vinegar, rice wine is best
2 cups water
1 teaspoon salt, kosher
1 tablespoon sugar
1/2 tablespoon coriander whole
1 bay leaf
1 clove

Quart Jar

1 sweet red pepper, sliced
1 sweet yellow pepper, sliced
1 sweet orange pepper, sliced
1 shallot, sliced
1 clove garlic, smashed with the back of a knife

  1. Add the vinegar, water, salt, sugar, coriander, bay leaf, and clove in a saucepot.
  2. Bring to a boil and boil for 5 minutes.
  3. In a 1-quart jar add the peppers, shallot and garlic.
  4. Make sure you squeeze it all in there.
  5. Add to the quart jar and seal.
  6. Place the jar in the fridge overnight.

 

DAMN HOT Pickled Peppers

Makes 1qt

BRINE

1 cup apple cider vinegar
1 lemon, juiced
2 cups water
1 teaspoon salt, kosher
1 tablespoon sugar
1/2 tablespoon coriander whole
1 pinch cayenne

Quart Jar

6 jalapeno, sliced
1 pablano pepper, sliced
1/2 onion, sliced
2 clove garlic, smashed with the back of a knife

  1. Add the vinegar, water, salt, sugar, coriander, and cayenne in a saucepot.
  2. Bring to a boil for 5 minutes.
  3. In a 1-quart jar add the peppers, shallot and garlic.
  4. Make sure you squeeze it all in there.
  5. Add the hot liquid the quart jar and seal.
  6. Place the jar in the fridge overnight.
